Directions Boil: Preparation: Combine 1-3/4 cups water, 1 cup rice and a pinch of salt. Bring to a boil over high heat . Cover, reduce heat and simmer for 30 minutes. Remove from heat. Let stand covered for a few minutes. Fluff and serve. A rice cooker may be used with the same water-to-rice ratio. 1 cup raw rice yields 3 cups cooked rice. Veggie thai curry rice : Brown 1 cup sliced onion in 1 tbs coconut oil in medium saucepan. Stir in 2 tbs Thai curry paste, 2 tbs soy sauce, 2 tbs minced fresh ginger. Add 4 cups sliced fresh vegetables, 1 cup raw rice, one 14-oz can coconut milk, 1 cup water. Simmer covered 25-30 minutes, stirring 1-2 times. Top with chopped peanuts.
