Smoky Santa Fe Chicken: Prep: 10 min. Cook: 10-12 min. Serves: 6. Ingredients: 2 tablespoons olive oil; 1-1/2 pounds chicken breast, 1 inch cubes; 1 packet Victoria Taylor's Smoky Santa Fe Chicken Seasoning; 4 cups cooked rice; 1 can (14.5 oz.) diced tomatoes; 1 can (15.5 oz.) black beans, drained and rinsed; 1 cup (8 oz.) corn kernels; 1 cup shredded cheddar cheese; green onion (optional). 1. Heat oil in a large skillet on medium-high heat. 2. Add chicken and 3 tablespoons of Smoky Santa Fe Chicken Seasoning. Saute for 5-7 minutes, stirring occasionally, until chicken is cooked through. 3. Add rice, tomatoes, black beans, corn, and remaining Smoky Santa Fe Seasoning to pan. Cook for 2-4 minutes until heated through, stirring occasionally. 4. Top with cheese and cover the pan for 1 minute. 5. Garnish with chopped green onion, if desired.
