Directions Just Add - 3 ripe bananas, mashed (about 2 cups) + 1 egg + 1/3 cup oil. Preheat oven to 350 degrees F. Empty bread mix into medium bowl and whisk dry ingredients. Mix 3 ripe mashed bananas, egg and 1/3 cup oil in separate bowl. Add to bread mix and stir until fully incorporated (do not over-mix). Pour batter into a greased and floured 8 inch x 4 inch loaf pan. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean. Cool completely before removing from pan. Banana Topping (Optional): 1 medium banana, 2 tbsp sugar, 1/2 tsp cinnamon - Slice banana evenly lengthwise. Press the sliced banana into batter with flat, sliced side facing up. Mix together your sugar and cinnamon topping and sprinkle on top of bread batter and banana prior to baking. Muffin Variation: Follow steps 1 and 2 above. Pour batter into lined cupcake pan (1/2 - 2/3 full). Bake for 35-45 minutes or until a toothpick inserted in the center comes out clean. Allow to cool. Makes about 12 muffins.
