Instructions: We recommend starting your fire with a charcoal chimney. It is a quick, easy way to get your coals ready to cook over. Light them with paper or other natural starter to avoid any chemicals affecting the taste of your food. An electric starter or paraffin coated sticks may also be used as they are both ecological and economical. Once the coals are ready to cook over, sprinkle the chips on the hot coals and close the lid. Cooking with the lid closed will enhance the smoke flavor and keep the chips from immediately flaring up. For a longer smoking period, place the wood chips in a reusable smoker tray or a heavy-duty foil pouch. Place the tray or pouch on the cooking grid directly over the hottest area of coals until it begins to smoke. Once the chips are smoking, move them to the side to make from for the food. Watch for flare-ups.
